Li shan, or Mount Pear, high mountain tea is made from the tea trees that are grown at altitudes higher than 2000 meters above sea level. The high-altitude provides a cool and misty climate with significant temperature differences between day and night. These conditions are ideal for producing high-quality tea, as they slow the growth of the tea plants, allowing for the development of rich flavors. The leaves of Lishan tea are usually dark green and tightly rolled into small pellets. When brewed, the leaves unfurl to reveal their full size and vibrant green color. The honey yellow-colored tea soup provides a lively mellow and sweet flavor that lingers at the back of the throat with a sweet pear note.
HARVESTING
The tea is hand-picked to ensure the highest quality leaves are selected. The traditional processing methods include withering, rolling, partial oxidation, and drying, all designed to preserve the tea's delicate flavors and aromas.
